Nutrition Visit — Day One
Prior to day one of your physical visit, you will receive a package of paperwork in the mail and via email. We ask that you complete your nutrition assessment form and three-day food diary to the best of your ability and bring it with you on your initial visit. At your initial visit, the Executive Health Program registered dietitian will review your nutrition assessment with you. The goal of this visit is assessment; it allows our dietitian an opportunity to gather information on your dietary habits/history, goals and possibe limitations to eating healthy. Please bring all questions that you have as you will have a one-on-one visit with her.

Lemon Pepper Shrimp Scampi  

Ingredients:

  • 1 cup uncooked orzo (whole wheat if available)
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon salt, divided
  • 7 teaspoons unsalted butter, divided
  • 1 1/2 pounds peeled and deveined     jumbo shrimp
  • 1/2 cup chopped red bell pepper
  • 2 teaspoons minced fresh garlic
  • 2 tablespoons fresh lemon juice (about the juice of one lemon)
  • 1/4 teaspoon freshly ground black pepper

Directions: Cook orzo according to package directions, omitting salt and fat. Drain. Place orzo in a medium bowl. Stir in parsley and 1/4 teaspoon salt; cover and keep warm.

While orzo cooks, melt 1 tablespoon butter in a large nonstick skillet over a medium-high heat. Sprinkle shrimp with remaining 1/4 teaspoon salt. Add half of shrimp to pan; saute 2 minutes or until almost done. Transfer shrimp to a plate. Melt 1 teaspoon butter in pan. Add remaining shrimp to pan; saute 2 minutes or until almost done. Transfer to plate.

Melt remaining 1 tablespoon butter in pan. Add bell pepper and cook until fragrant, about 3 minutes. Add garlic to pan; cook 30 seconds, stirring constantly. Stir in shrimp, juice, and pepper; cook 1 minute or until shrimp are done.

Nutrition Visit — Day Two
Prior to day two of your physical visit, the dietitian will review your lab work for nutritional concerns. After meeting with the doctor and discussing lab work, you will again meet with the dietitian. At this time, nutrition education will be provided based on the needs and desires of the client. Education can include, but is not limited to:

  • Healthy weight loss/weight gain
  • Portion sizes
  • Food labels
  • Lowering cholesterol/triglycerides through diet
  • Nutrition for diabetes
  • Including fiber in your diet
  • Healthy snacking
  • Healthy fast food dining
  • Restaurant dining
  • Grocery shopping ideas
  • Sports/exercise nutrition

Handouts and take-home information will be provided at the time of education. The dietitian will discuss nutrition recommendations for you in order to help you meet your health/nutrition goals.

Q&A with the Registered Dietitian
Q: How should I prepare to meet with the dietitian?
A: Complete your nutrition assessment form to the best of your ability and bring with you to day one of physical.

Q: How much time can I expect to spend with the dietitian on my day one and day two visits?
A: The amount of time you will spend with the dietitian will depend on the program you choose and your individual needs.

Q: How specific do I need to be when completing my three-day food diary?
A: As specific as possible! Please try to include serving sizes (amounts/measurements), how the food was cooked/prepared, if it is regular/low-fat/fat-free, and times of eating.

Q: Does the dietitian give me specific recommendations?
A: The dietitian will provide you with education and guidelines based on the foods you like, your schedule, your lab work, etc. The recommendations will be tailored to your individual needs.

Q: Does your program offer nutrition counseling services outside of the physical?
A: Yes. We offer additional packages (for an additional fee; see the Nutrition Packages section) that range anywhere from one day to one year. The dietitian can help you determine which package is best for you based on your schedule, need for accountability and goals.

Q: Can the dietitian help me figure out what to eat and when to eat, even with my busy schedule?
A: Yes. In our additional nutrition packages you will receive a meal plan.  A meal plan is essentially a chart of meals/snacks that fit your calorie goals, that you like and that fit your schedule. You will walk away with multiple options for breakfast, lunch, dinner and snacks for at home, in the office and at restaurants/business and dinners/fast food establishments.

What is Metabolic Syndrome?
Metabolic Syndrome is a collection of heart disease risk factors that increase your chance of developing heart disease, stroke and diabetes. According to a national health survey, one in five Americans has metabolic syndrome.

You are diagnosed with Metabolic Syndrome if you have three or more of the following:

  • A waistline of more than 35 inches for women or more than 40 inches for men
  • A blood pressure of 130/85 mmHg or higher or are on blood pressure medications
  • A triglyceride level above 150 mg/dL
  • A fasting blood glucose level greater than 100 mg/dL or are on glucose lowering medications
  • A high density lipoprotein level (HDL) less than 50 mg/dL for women and under 40 mg/dL for men
