Incorporate Fall Colors Into Your Diet For Healthy Results

ALLEN, Texas — The kids are busy with homework and extracurricular activities. The work load is mounting. Time — what is that anymore?

With all the extra demands on schedules, many nights a week the family is eating out. Everyone is feeling the drain of more output and less healthy food input. Before it gets hazy, here are several fun fall fruits and veggies that will increase energy and help maintain a healthy diet for all members of the family.

The U.S. Centers for Disease Control and Prevention has several recommendations about the benefits of fruits and vegetables. It can be fun to try a variety of different dishes to keep dinner time from being boring. Here are just a few ideas from the CDC:

  • Cauliflower: Not just raw, try this one mashed or roasted as an alternative to potatoes. Cauliflower is high in folate, fiber, Vitamin C and K.
  • Figs: The Fiber Fruit & the Fruit of the Month! This fruit contains more fiber than any other fruit or vegetable.
  • Pumpkins: Decorate & Dine! Not just for pie, try pumpkin soup! Pumpkins are high in Vitamins A and C and folate
  • Squash: Invigorate your game with some tasty, colorful squash! This vegetable is primo with regard to nutrition — high in Vitamins A and C, potassium, fiber, folate, and Thiamin.
  • Sweet Potatoes: Makes a great substitution for that regular spud! Sweet potatoes are high in Vitamins A, C and B6, fiber, copper, and potassium.
  • Clementine oranges: California orange meet your “Mini-Me!” Clementines are high in Vitamin C, fiber, and folate.
  • Tomatoes: Sliced, juiced, or pureed — any which way, it’s a health treat! High in potassium and Vitamin C.

“These fruits and veggies are great for most diets,” says Dr. Starling Reid, a physician on the medical staff at Texas Health Presbyterian Hospital Allen. “As with any dietary changes, check with your physician about the amounts of certain foods in your particular diet in conjunction with any medication you may be taking.”

Autumn is full of rich, vibrant and warm colors. Remember this when choosing fruits and veggies because the most nutrition comes from those with darker and vibrant colors.
